Pumpkin Spice Granola + DIY Pumpkin Pie Spice [FB Live 10.1.2018]

Pumpkin Spice Granola is the perfect fall snack or breakfast to keep you energized! Sprinkle it over a bowl of yogurt, eat for breakfast with milk, or simply snag a handful for a snack!

Oats and crispy rice cereal are coated with a mixture of pumpkin, maple syrup, and fall spices and baked to golden brown. Add in your favorite nuts or dried fruit to take it to the next level.

Pumpkin Spice Granola

Yields: 6 cups

Ingredients

3 1/2 cups oats
2 1/2 cups crispy rice cereal
2 tsp. pumpkin pie spice
3/4 tsp. salt
3/4 cup brown sugar
3/4 cup pumpkin puree
1/4 cup maple syrup
1 tsp. vanilla extract
1 1/2 cups nuts of your choice (we recommend pecans), optional
1 cup dried fruit or chocolate chips (we recommend craisins), optional

Directions

  1. Preheat oven to 325*F.
  2. In a large mixing bowl, combine oats, crispy rice cereal, pumpkin pie spice, and salt until well-mixed.
  3. In a small bowl, whisk together brown sugar, pumpkin puree, maple syrup, and vanilla extract. Toss over dry mixture until well-coated.
  4. Spread granola mixture onto a parchment-lined baking sheet.
  5. Bake at 325*F for 30 minutes. Stir around, adding nuts if using, and bake an additional 15 minutes. Stir around, baking an additional 10-15 minutes if it is still soft.
  6. Stir in dried fruit or chocolate chips when cool. Store in an airtight container.

 

Pumpkin Pie Spice

Yields: ~1/2 cup

Ingredients

1/4 cup cinnamon
2 tbsp. ginger
2 tbsp. allspice
1 tbsp. cloves
1/2 tbsp. nutmeg

Directions

Combine all ingredients in a bowl. Store in airtight container.
