Double Chocolate Sprinkle Cookies
Yields: 4 dozen cookies
Ingredients
1 cup unsalted butter, softened
1 cup sugar
1 cup packed brown sugar
2 eggs
1 tsp. vanilla extract
2 1/2 cups old-fashioned oats
2 cups all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 cups semisweet chocolate chips
1 cup chocolate sprinkles
Directions
- In a large mixing bowl, cream together butter, sugar, and brown sugar until light & fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla extract.
- Place the oats in a blender or food processor; cover and process until finely ground.
- Combine the ground oats, flour, baking soda, baking powder, and salt; add mixture to creamed mixture and mix well. Stir in chocolate chips and sprinkles.
- Roll into 1 1/2-inch balls. Place 2 inches apart on parchment-lined baking sheets.
- Bake at 350*F for 12-14 minutes until golden brown.
