Chicken Salad + Meal Planning Tips

It’s the new year, and I’m all about getting back into a healthy routine! One of my biggest struggles is meal planning & making dinner for my family. In this week’s video, we talk about meal planning tips & tricks, and share one of our favorite healthy lunch recipes. Listed below you can see this week’s meal plan and the Chicken Salad recipe!

Meal Plan – I’ve included links to recipes where applicable.

Monday – Smoked Sausage & Cheddar Gnocchi (substitute smoked kielbasa for ham), roasted broccoli

Tuesday – Pesto & Spinach Tortellini, Garlic Bread
(So easy – just boil your favorite tortellini and mix with a package of pesto and a bag of baby spinach until the spinach wilts. Add some cooked chicken for protein.)

Wednesday – BFD – Blueberry Pancakes, Bacon, & fruit of some sort

Thursday – Baked Salmon, Roasted Potatoes, Salad Kit (love these for easy sides_

Friday – Leftovers/Frozen Pizza

Easy Lunch – Chicken Salad (recipe below)

Chicken Salad
Serves 4-6

1 rotisserie chicken, meat removed from the bone & shredded
2 Honeycrisp apples, finely diced
4 stalks celery, finely diced
1/2 cup Craisins
1/2 cup golden raisins
1/2 – 3/4 cup light mayo
salt & pepper to taste

Combine chicken, apples, celery, Craisins, and golden raisins in a large bowl. Season to taste with salt & pepper. Add mayo to mix. Serve with crackers, on bread, or over spinach.
